So, I've decided to post what I am having for dinner each night, in case anyone is interested:)
Tonight, David and I are taking the night off from cooking and heading to the Pioneer Pub. David LOVES the pub because they have some amazing nachos for only $5! He is also obsessed with his new found love of their chicken feta wrap. I'm not sure what I will be getting tonight, but I'll guarantee at least ONE of those two things will be on our table:)
Since we're eating out tonight, I thought I'd share what we had last night. David and I used to eat at Buffalo Wild Wings often when he still lived in Shreveport-Bossier. Now that he's back here, I've realized I kind of miss it, despite the whining I used to do about going there. So, I decided to bring BWW to our home! We really like their Buffalo Chicken Flatbread, so I thought I'd try and recreate it. I went online a couple weeks ago and ordered their Spicy Garlic Sauce - which is the sauce used on their flatbread. Then I cut up two chicken breasts into cubs and cooked them on the skillet - I seasoned them with some garlic powder and Foxy's (which is comparable to Tony Chachere's Cajun Seasoning - just minus all of the salt). I bought a package of thin and crispy pre-made pizza crusts - which worked perfectly! I spread the wing sauce on the pizza crust, then covered it in mozarella cheese. Once the chicken was done, I put that on top, and put on a little more cheese - why not?? Then I baked it for about 8 minutes on 425. It turned out amazing! David was very impressed - and to impress him by recreating Buffalo Wild Wings is an amazing feat! Not to mention, it was way cheaper than driving an hour to Shreveport and buying it at BWW!

Life in College Athletics
So, this is my first post as a "blogger". I don't really know how much I'll keep up with this, but it's always good to try.
To start things off, I suppose I'll introduce myself to anyone who might stumble upon my blog.
I'm 24, I work in college athletics in a small town in Louisiana...not married, but I've been dating the same guy for almost 2 1/2 years - so hopefully it's not too far away! God handed me some pretty challenging and difficult things last year, but as always, it wasn't more than I could handle, thanks to His help. I just purchased my own house, and as of yesterday, I am a credit card holder! -- funny that I could buy a house before I could own a credit card - does that make sense to anyone else?
Anyways, life is good, but busy...as it usually is in this profession, at this time of year. The students were on fall break at the beginning of the week, so Monday and Tuesday were blissful. I was able to take some time off of work and relax a little, as well as get some errands done. Monday and Tuesday were nice, and though I NEVER imagined that I'd be able to be a stay at home mom, I think one day I might be able to, if God provides the finances for my family so that I do not have to work....oh to dream:)
I haven't decided how I'm going to use this blog...I couldn't tell you if my posts will be insightful, or if I will simply tell you what I did that day, I guess I'll see where the wind takes me:)
For now, I'm going to stop procrastinating at work - and get back to business!
